Well, butter my paleo biscuits.

Saturday mornings are my favorite. Something about not waking up to an alarm suits me well. And the brunch. Oh, the BRUNCH…

Last Saturday, I rose right out of bed and the foodie in me said,  “I NEED BISCUITS.” Not just any biscuits – soft, fluffy and buttery biscuits.

I adapted this recipe from one I found on Allrecipes to incorporate some local grass-fed butter that adds much-needed fattiness and contrast to the sweet honey.

Paleo Buttered Honey Biscuits

2 1/2 cups blanched almond flour

1 tbsp local raw honey – Local raw honey is definitely preferred for its minimal processing and allergy resistance; I have two jars of local honey at home from Fullness Organic Farm in Baton Rouge and Westdome Nursery in St. Francisville! They’re great people who care a great deal about their food.

1/4 cup coconut oil, melted and cooled

2 farm fresh eggs, beaten

2 tbsp grass-fed butter – grass-fed butter (vs grain-fed) is the healthier & much more nutritious choice! It’s packed with Omega- 3s and heart health nutrients ❤

1 tsp baking soda

3/4 tsp salt

Instructions

Preheat your oven to 350. Mix all the ingredients except the grass-fed butter in a large bowl.

Using an ice cream scoop (preferably 2 oz), spoon out your biscuits on a baking sheet lined with parchment paper. Press down each biscuit with the back of the scoop or the palm of your hand until they look like the photo below! (If they aren’t round coming out of the scoop, you can roll each in your hands and press down the tops.)

Now for the fun. Melt the grass-fed butter and brush over the tops of each biscuit. (I admittedly don’t own a cooking brush…so I used a spoon and a brand new paint brush I had just bought the other day :)) Bake for 12-15 minutes or until brown, light and fluffy!

These biscuits are best enjoyed right out of the oven since they will be at their crispiest. Eat with some room temp salted grass-fed butter, housemade jam or housemade nut butters! I sliced them in half and made a breakfast sandwich with some scrambled yard eggs and pasture-raised bacon. The world is your biscuit!
